Enable the Dark Mode
Adjust Settings:

When Dark Mode is enabled, Mail can utilize a light background for email messages: Once Dark Mode is enabled, open Mail and select Mail > Settings (or Preferences). Deselect “Use dark backgrounds for messages” under the Viewing tab.
When Dark Mode is used, maps can have a light background: After enabling Dark Mode, launch Maps and select Maps > Settings (or Preferences). “Always use light map appearance” should be chosen. Deselect Use Dark Map by clicking View in the menu bar of Maps in earlier versions of macOS.
When Dark Mode is activated, notes can have a light background: Dark Mode first, then select Notes > Settings after launching Notes (or Preferences). “Use dark backgrounds for note content” should be deselected.

If a website is built to support Dark Mode, Safari will display it by default. You can view articles in Dark Mode with Safari Reader if the website doesn’t support it.
While Dark Mode is enabled, TextEdit can utilize a light background for documents: Dark Mode should be enabled before deselecting Use Dark Background for Windows in TextEdit’s View menu. 10.14.2 or later versions of macOS Mojave are required.
